Veggie Burger (Kala Chana Burger) by Manjula

Today I will be making veggie burger. This is a healthy and nutritious sandwich, yet very delicious. Main ingredient for the pattie is Kala chana also known as bengal gram. Kala chana is protein rich and healthy. For patties I used Kala chana and potatoes with spice mix and garnished with vegetables and chutney. This is my friend Savitha’s recipe who is a very good cook. I have tried many veggie burgers this is so far the best one. You will love these veggie burger. This recipe will make 6 burgers. To make veggie burger we will need: For patties we need 1/2 cup kala chana also known as Bengal gram. 1 cup potato boiled, peeled and mashed. 2 teaspoons fennel seed powder 2 teaspoons coriander powder (dhania) 1/4 teaspoon garam masala 1 teaspoon mango powder (amchoor) 1 teaspoon salt 1/4 teaspoon red chilli powder 2 teaspoons of chopped ginger 1 green chilli chopped 1 teaspoon lemon juice About 2 tablespoons of cilantro chopped (hara dhania) We also need about 2 tablespoons of oil
to make patties. For garnishing we need 2 cups cabbage sliced long ways 1 bell pepper remove the seed and sliced long ways. I am using the different color bell pepper just to
bring the color. 2 teaspoons oil to saute the vegetable. 1/4 cup of tamarind chutney 1/4 cup of hari cilantro chutney We also need the burger buns and some butter to make veggie burger sandwiches. For both chutneys check my website I have
done these recipes earlier. I am ready to make the patties for veggie burgers. I have already cooked the chana. First I soaked the chana for about 4 hours
in 3 cups of water which makes it faster to cook. Then I cooked them for about 20 minutes. After it comes to boil then you cook for
about 20 minutes without any salt. So it should be tender.
This chana will never be mushy. So I am ready to grind it. Ginger Green chilli Just grind this of consistency of thick paste. Let’s check this. Chana is looking very good. It’s very grainy and now I will mix all the other ingredient for patties in this. But before that I will take this out in a bowl. With kala chana now I will mix all the other ingredients to make the patties. As you notice I didn’t use any water when
I was grinding the kala chana. So first let’s put the potatoes. Fennel seeds Coriander powder Red chilli powder Mango powder Garam masala Salt Cilantro And lemon juice. Now mix it well together. Pattie masala is smelling very good
with all the nice spices. Now this looks little too dry so I will just add
couple of spoons of water. And mix is ready to make the patties. This mix will make 6 patties. And it will be about 1/3 cup each mix. So just divide this into 6 equal parts. This size is looking good. First I will saute the vegetables to garnish
the sandwiches. Heat is on, medium. And I am using the heavy bottom flat pan. So first I will add the oil. Cabbage Bell pepper And just saute for about 2 minutes. Vegetables should be still crunchy. This has been about 2 minutes. Vegetables are ready. They are just little soft. You don’t want to lose the crunch. I am ready to grill the patties. So I am using the flat skillet. Heat is on, medium. So first I am going to generously grease the skillet. Skillet should be moderately hot before you
put the patties. And you can hear little bit sizzling. And now just put the oil again from the top. And just wait for about 1 minute before you
turn them over. This has been about minute so I will turn the patties. And yes they are getting golden brown. Grease the patties again before turning. Patties are ready. Both sides are golden brown. Very nice color and this has taken me about 8 minutes. I am ready to grill the buns. So just butter it lightly, both sides. So I am grilling this over medium heat. Bun is ready. I am ready to make the veggie burger sandwich. So first I will put the hari cilantro chutney on one side. And then put the pattie. And some of the veggies. Beautiful color and nice crunch. And now just drizzle the tamarind chutney. I like the sweet and savor sandwich. Tastes really delicious. And then just close it. Veggie burger sandwich is ready to serve. This veggie burger sandwich is really delicious. My family really enjoy this. With this pattie one thing is good, you can prepare few days in advance. It stays for 3-4 days good in refrigerator. Or you can freeze it up to a month. These patties you can also serve them as appetizers with chutney. Enjoy. Thank you. Till we meet again, check out more recipes
