Chicken Chow Mein | Awesome Stir-fried Noodles | My Top 10 Chinese Dishes | 鸡肉炒面 (中文字幕)

Hello and welcome back. if you’re new to
this channel my name is Marie. Today I want to show you how to make chicken chow mein. Chow mein in Chinese means stir-fried
wheat noodles. It’s a staple dish in every Chinese household. It packs in more umami than any other stir-fried dish. Its texture ranges from chewy to soft
to crunchy. Let’s look at the ingredients and I’ll
show you how to make it. We’ll use 6 ounces of chicken breast. Slice it into strips like this. Then marinate them with cornstarch, soy sauce, along with Shaoxing wine. Give it a good mix to bind everything
together. Let it marinate for 20 minutes. For the vegetables you can use just
about anything you like, as long as they have texture and hold their shape well during stir frying. Today we’ll use carrot, bell pepper, onion, beansprouts, cabbage, and Chinese spinach. Julienne cut into strips like this. We’ll use three cloves of garlic. Chopped finely. Also add two thumb sizes of ginger. Remove is skin and mince. This are our prepped veggies. We’ll use these dry wheat noodles. If you
don’t have them on hand, you can substitute with Italian pasta such as
linguine or even spaghetti. Precook them in boiling water for about two minutes,
or according to the package instructions. Once they soften transfer them to
a pot of room-temperature water. This is to stop the cooking process as
well as removing the starch so they don’t stick together. Drain and set aside. Next , we look at the
ingredients for the stir-fry sauce. This is water,
dark soy sauce, light soy sauce, oyster sauce, sesame oil, white pepper, and
cornstarch. Each of these sauce ingredients are essential to getting an authentic stir-fry flavor. Now mix them all together. That finishes the preparation. Now we can start cooking. It’s best to use high heat for stir frying Start with 1 tablespoon of vegetable oil. We’ll cook the chicken first. Spread the pieces out and sear
the undersides by cooking for about a minute. Then turn them over and
sear the other side the same way. Continue until it’s thoroughly cook,
about another minute. Dish them out and set aside for now. Starting with a clean walk again. Add two tablespoons of vegetable oil. Cook the garlic and minced ginger. As soon as we smell the aroma,
add the vegetables. This cooks very fast, keep stirring so
the undersides don’t burn. Some vegetables like this spinach and sweet
onion take less time to cook. So space them out according to their cooking time. Before the vegetables soften too much, add the noodles. Mix well and then pour in the stir-fry sauce. Once the sauce is incorporated put the meat in. And follow by some beansprouts
for added crunchiness. Our chow mein is done. Garnish with toasted sesame seeds if you
like. There you have it, a delicious chow mein
