Hi everyone, I’m MASA. Today I’d like to share an interesting recipe of making a bowl of delicious noodles. It’s called [Japanese] Taiwan fu mazesoba Nagoya Style Taiwan Noodles You may find it interesting hearing this name, which contains Nagoya and Taiwan. To be honest, this is not a traditional Taiwan dish. The recipe is invented by a restaurant in Nagoya. [Tip] The recipe idea came from Taiwan cuisine and it turns out a hit. [Tip] Thus, not only Nagoya but also many restaurants all over Japan are selling this dish nowadays. It’s really easy. OK, let’s get started. (3 shallots) (Mince them) (Chopped green onion- about 20 g) (Chop into small rings) (Chinese chives—about 20 g) (Chop into small pieces) (2 cloves of garlic) (Grind into paste) (Some oil in the pot) (Put to medium heat) (Minced shallots) (Sauté until fragrant) (Ground pork—300 g) [Tip] You can also use ground beef or ground chicken. (Stir-fry until colored) (Sake—50 cc) (Water—100 cc) (Rock sugar—15 g) (Soy sauce－20 cc) (Soba tsuyu—15 cc)
[Tip] If you don’t have soba tsuyu, you can add another 10 cc of soy sauce in previous step. (total 30 cc.) (1 tbsp of oyster sauce) (1 tsp of white pepper) (1/2 tsp of cinnamon powder) (Put to low heat) (Keep boiling for 30 minutes) [Tip] It’s very similar to making braised pork.

So there is no need to blanch for too long. (Remove excess water) (Some salt) (1/2 tsp of sesame oil) (Mix them well) (Place the noodles into a bowl) (Chopped green onions & Chinese chives) (Katsuobushi, crushed into small pieces—5 g) (Garlic paste) (Cut 1/2 sheet of nori into small pieces) (1 egg yolk or soft boiled egg) (?????)
