Welcome to Ape Amma youtube channel Today I’m going to make Chinese spring rolls But before that, I’ll be making the spring roll sheets earlier I’ve done a video on how to make samosa sheets these sheets are much softer you can keep them in the freezer and use it anytime. 1 cup flour hot water, that’s little less than 1/2 cup don’t use boiling water add 2 tsp more water and knead now just wet your fingers and make the dough, don’t add too much water. the dough should not be very moist if it’s too wet, slightly dust some flour and make sure it’s not sticky. now knead this dough for about a minute and leave it covered for 20 mins after 20 mins, take out the dough and make it to a log shape. not divide the dough into 10 pieces add some flour to a plate. now make small balls and place it on the plate. make sure they don’t touch each other. now take each ball and flatten them slightly. after flattening the balls. take each one and small small round rotties. now keep them on the floured surface. now I’m going to stretch out the half rolled sheets brush some oil on one of the sheets add some flour. take the next sheet and apply on one side. now keep the oiled side on the other sheet now brush the top side of that sheet with some oil too. do the same for rest of the sheets after doing the first 5 sheets, keep it aside. Now do the same for the rest of the 5 sheets. now take the first five sheets we prepared and stretch it from the center. don’t touch the edges. use the rolling pin and roll it out without flattening the edges too much. the circle has to be in a size that matches your steamer. now after flattening this first 5 sheets, flatten the remaining 5 sheets too. Now the water is boiling in the steamer I’ve placed a sieve inside the steamer so the sheets will be placed perfectly. now you need a wet towel for this. now place the wet cloth in the steamer before adding the sheets, make sure the steam is already coming out. now keep both the sets of 5 sheets on top of each other. now cover it with the wet cloth and steam for 5 minutes. the flame has to be reduced now. it’s too hot so better wear some gloves. now take it out after 5 minutes. because of the wet cloth we can easily peel this off the cloth. see how easily these sheets are peeled off. you can make around 8 spring rolls from 1 cup of flour. even though we made 10 balls, most of the time, the sheets at the top and bottom gets damaged. So at least we will have 8 sheets. you can freeze them and use it even for a month. I’ve made Sri lankan fish rolls earlier. they are made using a batter similar to pan cake. it’s a little thicker than this one. but this is very crispy when fried. now you can put this in a zip lock bag and keep it in the freezer for about a month. the day before using take it out of the freezer. and keep in the normal fridge. now I’m going to use this tomorrow morning so I’ll not keep it in the freezer.. I’ll just keep it in the center of the fridge. before making the rolls, steam this for about an minute. Now you can make this for a party, or give it for your kids lunch box.
